I am guilty of having cooked many things and ultimately tossing them in the trash….BUT you have to try a little of everything, right? Below are a few recipes that I go back to often.

BREAKFAST

Pancakes– 7 ingredient easy peasy pancakes

Tofu English Muffin– I skipped the zucchini, added veggie bacon and Kite Hill cheese…and then I ate two!

Banana Crumb Muffins– I found this recipe looking for something to do with my 4 bananas that were about to go bad. I have everything I needed already in the house and they were delicious!

APPETIZERS

Buffalo cauliflower bites- Made these for super bowl- amazeballs!

Almond Crusted Baked Eggplant– I also make these weekly. They are a great snack or even meal with a side of potato.

LUNCH/DINNER

Chick pea salad– LOVE this on toast or just plain.  I make this weekly and sometimes leave out the onion and celery if I don’t have it.

Roasted Veggie Pitas with Avocado dip-This is pretty easy and delicious! 

Shephards Pie– This is made the Beyond Meat beef crumbles which I thoroughly enjoy. Its nice on a cold night!

Beef Bolognese– Also made with Beyond Beef.

One Pan Mexican Quinoa– This isn’t technically a vegan recipe but I either leave out the meat completely or I substitute with Beyond Beef and it’s delicious!

Lentil Vegetable Soup – I added in some frozen corn and peas to this one. Super easy, hearty and delicious!

Chloe’s Mama’s Spaghetti and Meatballs– I made these meatballs and sauce and made a hero instead of over pasta and WOW! The carnivores go back for seconds and even thirds!

Artichoke and Spinach Farro Salad– great salad, fast, easy and filling. This is one I’ll definitely bring to dinner parties to share with others.

Roasted Brussels Sprouts, Cinnamon Butternut Squash, Pecans, and Cranberries– I made this dish to bring to a dinner party and it was a huge hit! Its a great side or even as a meal.

Red White and Blue Quinoa Fruit Salad– This dish was a perfect compliment to a 4th of July BBQ on the water. It was a big hit!

Zucchini Lasagna– I made this dish for my family and it was amazing! I did add in noodles and went light on the macadamia ricotta as I was unsure, but the dish was a hit!

“Meaty” Lasagna– delicious with tofu ricotta and walnut/mushroom meat

Eggplant Parmesan– Made with homemade cashew ricotta- this was simple and delicious!

Stuffed Acorn Squash with Quinoa Stuffing– Detoxinista’s recipe. Delicious, filling, and so fall!

Kung Pao Chickpeas (Slow Cooker)– Another great one from Detoxinista. So easy and so yummy!

Macaroni & Cheese– I have tried MANY vegan mac and cheese recipes and most ended up in the trash. This one though……so good!

Slow Cooker White Bean Stew– this made enough for 10 people for under $10. Easy and delicious.

Mushroom Stroganoff– This was creamy and delicious and enjoyed by all.

Minestrone Soup– easy, simple, and perfect for a cold night.

Dill Potato Salad– I have made this one a few times now and its become a favorite. Light and delicious, perfect for summer lunches. Thyme & Love have some really great recipes.

Mushroom Stroganoff – Delicious, savory, and easy! I’m not a huge mushroom fan so sometimes I also use tofu or SweetEarth mindful chk’n which I am obsessed with.

Tangy Braised Chickpea – Make this one! Quick!

Chickpea Piccata Recipe – We really enjoyed this dish. Again, I made it once with SweetEarth Mindful Chik’n instead of chickpeas and it was just as yummy if not more!

Wacky Blueberry Muffins – Quick, easy and delicious!

Chocolate Chip Cookies- Super yummy and clean!
